Our founder, Uncle Lim, started with a single pushcart in 1982. His philosophy was simple: fire is a flavor. You can't fake the smoke. You can't rush the caramelization.
Every morning at 4 AM, we pound fresh lemongrass, turmeric, and galangal. By 5 PM, the coals are glowing red. This isn't fast food. This is slow, deliberate, delicious art.
Fresh turmeric, lemongrass, coriander, and cumin. Ground daily. Marinated for 12 hours minimum to penetrate the meat fibers.
Hand-threaded by our aunties with decades of experience. Just the right amount of fat-to-meat ratio for juiciness.
Grilled over mangrove wood charcoal. Fanned constantly to control the heat. The result? That signature smoky char.
